Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, combine 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1 1/2 teaspoons pumpkin spice.
In a separate bowl, whisk together 1 cup canned pumpkin puree, 2 large eggs, 1/2 cup granulated sugar, 1/2 cup brown sugar, and 1/2 cup vegetable oil until well combined
Gradually add the wet mixture to the dry ingredients, stirring until just combined. Be careful not to overmix.
Fold in 1/2 cup chocolate chips or chopped nuts if desired.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
